Léo Boire + Manger Opens at Le Westin Tremblant

MONT-TREMBLANT, Que. — Léo boire + manger has opened at Le Westin Tremblant. In partnership with Oliver & Bonacini (O&B) Hospitality, this chef-driven brasserie offers a warm and welcoming atmosphere, re-defining the culinary landscape in Tremblant, Que.

Léo’s culinary vision is driven by O&B corporate executive chef Anthony Walsh; Montreal’s Bar George executive chef Kevin Ramasawmy; and Bar George chef de cuisine Luc Le Gourvellec, who will now be resident chef at Léo. Familiar yet refined, the menu lends itself well to everything from avant and après bites to celebratory feasts, family dinners and social gatherings.

Open year round, Léo serves breakfast, lunch and dinner, as well as weekend brunch and bar bites in its 130-seat restaurant. Stars of the dinner menu include seared foie gras with brioche, compressed pineapple, hazelnut, albufera sauce and rum; scallop risotto with fried boudin noir, apple and sea asparagus; and beef wellington with carrots, Quebec mushrooms and Bordelaise sauce. For dessert, the signature Rum Baba and the Profiterol are presented tableside.

The restaurant will also showcase a robust wine list emphasizing diverse winemakers, including strong local representation, with a wide range of varietals and price points. Inspired by Bar George’s cocktail culture, Léo’s cocktail list balances beloved classics with signature recipes such as a Deluxe Old Fashioned with Angel’s Envy bourbon, Appleton 8 rum and demerara syrup and The Last One with Patrón Reposado tequila, Del Maguey mezcal, blueberry and eucalyptus cordial and lime.

Upon entry, guests pass through a 600-bottle wine room. Descending the “piste” to the second level, guests are greeted by a host stand situated in front of a fireplace.

Drawing inspiration from the Canadian Shield and the colour palate of the Tremblant region, the restaurant features natural fabrics in warm sage, amber and earthy neutrals. Inviting bouclé and soft velvets counterpoint the light and dark honed marbles with layered wood, brass and stone accents anchor the dining room. On the main floor, the bar provides casual seating by day, transforming in the evening with warm lighting.

Léo offers a preview of the transformations underway at Le Westin Tremblant. Recently acquired by GPHC Capital and operated by Atlific Hotels, the Grand Dame of Tremblant is set to unveil a new spa and wellness facility, fitness centre, and updated public spaces in the coming weeks. Additionally, the terrace at Léo is scheduled to open this summer.
