Palé Hall Hotel retains Green Michelin Star

Palé Hall Hotel in Snowdonia has retained its prestigious Green Michelin Star, as its Henry Robertson restaurant has also been reinspected and awarded three AA Rosettes under the leadership of new head chef Sam Griffiths.

According to the hotel, these accolades reaffirm the hotel’s “unwavering” commitment to delivering unparalleled hospitality experiences while championing environmental stewardship in the heart of North Wales.

Palé Hall Hotel, which has its own completely carbon-neutral source of electricity from an on-site hydro-electric generating plant, was first recognised with Wales’ first Green Michelin Star in 2021.

In addition to celebrating the achievements of the culinary team, Palé Hall Hotel has also acknowledged senior sous chef Joshua Morris’s recent recognition as ‘Welsh Chef of the Year 2024’. This award further solidifies the hotel’s reputation for nurturing culinary talent.

Debbie Cappadona, general manager of Palé Hall Hotel, said: “While we are immensely proud of our team’s culinary achievements, retaining our Green Michelin Star and 3 AA Rosettes under head chef Sam Griffiths’ leadership holds particular significance for us.

“These accolades underscore our unwavering dedication to sustainability and culinary excellence, ensuring that every guest experience at Palé Hall Hotel is not only unforgettable but also environmentally conscious.”
