Moma Group’s Mimosa restaurant will be debuting at The Langham Hotel this April.
Mimosa first launched at Hotel de La Marine in Paris and aims to channel “the essence of the sun, the south and the Mediterranean”.
The restaurant, which mainly anchors itself within historical buildings, will introduce a Mediterranean sharing concept with whole sea bass baked in salt crust with sauce vierge and warm Cote d’Azur-style potato salad, spit-roast corn-fed coquelet with thyme and confit lemon.
From the garden, burnt leek “Mimosa style, tomato tartar with pan de Cristal and salade Niçoise will also feature on the menu, as well as five signature flavours of devilled eggs.
Designed by French designer Dorothée Delaye, the dining room has drawn inspiration from the golden era of Capri and the vibrant energy of the 60s.
The high ceilings and bay windows with high palm chandeliers, rattan fixtures, and Riva wood will “complement the coral carpet and pops of vibrant hues”.
